We’re getting a proper summer here in London. Lots of sun, multiple heatwaves, and an increased demand for ice cream.

I’ve been making this ridiculously simple homemade ice cream for years. It’s so easy (all you need is a handheld mixer or a persistent person with a whisk) and so simple (just two ingredients). But the best part? You can — finally — make the ice cream of your dreams.

My dreams include:

deconstructed apricot crumble: crumble topping (butter, flour, sugar, baking powder, salt) + stewed apricots (apricots + brown sugar + lemon juice) with vanilla extract and a pinch of sea salt
