This cake was born at the end of my last pregnancy with my third daughter, Domino. During all of my pregnancies I became slightly obsessed with “fresh” smells. Cleaning substances like anti-bacterial spray and citrusy smells especially. In this particular pregnancy, I was suffering from a months-long sinus infection that robbed me of much of my sense of taste and smell, so really strong citrus became my obsession. I found a zesty closet freshener thing at Zara Home and would carry it around in my pocket so I could sniff it like an addict throughout the day.
Another thing I became obsessed with (like only a heavily pregnant woman can be) was lemon cake. I scoured the internet for recipes and combined them until I made this, the lemoniest of lemon cakes. I would make it over and over, slicing away at it all day. I couldn’t taste much, but I could tell this was really citrusy and that was the only thing I cared about.
Those sinusey, obsessive days are, thankfully, long over (Domino just turned 7!). But out of the single mindedness came a very, very good cake that we still love and that you can love, too.
